In order to bring unfermented juice into your facility, follow a 2-step process:
First, you will create the juice lot, then you will need to adjust the volume of the lot.
Step 1. Create a new Juice Lot
Go to the Lot Explorer and select +Add Lot in the top right corner of the explorer screen.

Select lot type: Juice/Wine lot

Set the Juice/Wine composition: Fill in the lot's vintage, vineyard, and block/varietal attributes. To add additional components, click on + Add component at the top

Set the Juice/Wine Lot attributes
Make sure to set your Tax class to Sweetening Juice. This will populate the 5120.17 TTB report on Page 2, Part IV, Column (c), Line 2.
Step 2. Adjust the volume of the lot
Note: The Volume Adjustment and Bond to Bond Transfer In actions can be backdated to any date, even prior to lot creation.
- Go to your new Lot Details page
- Click on Record Action and select 1 of 2 options. Because the tax class is set to Sweetening Juice, and the volume is undeclared, either option will populate in Part IV on Line 2, in column c.

If you are going to kick off a ferment with the new juice, go ahead and update the tax class to Fermenting Juice after the transfer into your facility. This will move the volume to Part VII (In Fermenters).
